Sandra’s Kickin’ Chicken Soup has a cult following at 2nd Helpings – and with good reason! This twist on a classic soup has an added kick that will warm you from the inside out on these cool spring days. Whether you serve it with a fresh salad, 2nd Helpings’ homemade bagel chips, or all by itself, this one is a crowd-pleaser!
Sandra’s Kickin’ Chicken Soup
- 1 small onion- chopped
- 2 ribs celery- chopped
- 1/4 cup of butter
- 1/4 cup of all purpose flour
- 3/4 cup milk
- 1 1/2 cup chicken broth
- 2 cups shredded cooked chicken
- 1/4 cup buffalo wing sauce (to taste)
- Dash of cayenne pepper
- 1/2 tsp. celery salt
- 1/2 tsp garlic salt
- 1/2 teaspoon ranch mix
- 4 oz. shredded cheddar cheese
In a 2-quart saucepan over medium-high heat, melt butter and add in flour. Once the flour is mixed in, slowly whisk in milk and chicken broth.
Put chopped onions and chopped celery in a separate bowl. Microwave for 4 minutes.
Add in remaining ingredients including the cooked celery and onions to the 2 qt. saucepan, except for the cheddar cheese.
Simmer ingredients, do not boil.
Add cheddar cheese after all ingredients are mixed well and hot.
Turn heat off, occasionally stirring.
